Gordon Ramsay's got a good point here - butchers are not that easy to find anymore and
supermarkets supply most of the meat it seems. 
The skill, knowledge and the experience of a great butcher is something we need from time
to time when shopping for meat - someone who can answer questions and give advice. 
Look for them - they are getting rare - #meat
